Legal Restaurants, a full-service hospitality development group and first mover in designing thoughtful food and beverage concepts for the real estate office market, today announced the culinary team and menu concept at The Florence, a restaurant, cocktail bar and café located at Kilroy Sabre Springs. The culinary team brings together award-winning industry veterans Antonio Friscia, Ricardo Heredia and Fern Tran to launch a locally-sourced, elevated menu that offers breakfast and lunch items at an affordable price point.

The Florence’s culinary program is led by Partner and Executive Chef Ricardo Heredia, with support from Legal Restaurants’ Founder and renowned Chef Antonio Friscia and Legal Restaurants’ Culinary Director and Partner Fern Tran. The team brings a combined 150 years of industry experience to the restaurant.

Prior to joining The Florence, Chef Heredia, a 2014 World Food Champion Alumnus, was a consultant for Global Dining, Inc., playing a pivotal role in the openings of Tokyo’s Taco Fanatico and Zest Cantina. Chef Heredia is known for his work at San Diego’s Alchemy Restaurant, as well as Las Vegas’ China Poblano and Los Angeles’ Border Grill.

Legal Restaurants’ founder Antonio Friscia utilizes over three decades of experience to provide support on The Florence’s menu development. Friscia has been chef-partner at several local high-profile projects, including Gaijin Noodle & Sake House, Fireside by the Patio, Don Chido, and Rustic Root. Friscia is also an Advanced Sommelier with the Court of Master Sommeliers.

Chef Fern Tran will also oversee the menu concept and development at The Florence as Legal Restaurants’ Culinary Director. Prior to joining the team, Chef Tran was Chef de Cuisine at Friscia’s Don Chido and Gaijin Noodle and Sake House. Chef Tran brings a wealth of knowledge around specialty woodfire grills and Caja China methods.

The Florence’s menu is driven by Chef Heredia, showcasing his culinary expertise with a creative and fresh spin on local fare. Fresh seafood and farmers’ market-inspired dishes take the spotlight as The Florence works with several trusted partners including Catalina Offshore and Stehly Farms. Select menu items will pay homage to the culinary destination’s namesake Florence Chadwick, a San Diego swimming legend and one of the most renowned and influential women in history. For instance, one of the breakfast choices will be the Chadwick Bun, a baked good inspired by Florence’s swim across the English Channel and the classic Chelsea Buns from 18th century London.

Other menu items include the Memory made of poached oyster, almond milk, chicken fat, spring peas, and sorrel, Cast Iron Pork inspired by Kogi BBQ and served with  baby turnip, caramelized fennel and pork demi, and Cedar Roasted Salmon wrapped and topped with raclette cheese grilled and shaved tableside.

Legal Restaurants opened The Florence in March 2019 at Kilroy Sabre Springs. Paying homage to San Diego swimming legend Florence Chadwick, the coastal American restaurant will offer over two acres of outdoor event space and multiple private event areas, in addition to stunning interiors. The Florence will have farmers market driven menus, locally-sourced organic produce and day-boat seafood.

The interior includes an expansive craft cocktail bar, full barista café bar and creative lounge seating that can accommodate private and public events. It also includes custom lounge furniture, stunning chandeliers, cape cod shutters, and vintage salvaged wood-backed large banquettes flanking the bar for seating up to 200. The two-acre outdoor patio features intimate fire pits, a regulation sized bocce ball court, covered “boat shack” dining room, and chic beach resort style seating throughout.
