The Butchery Coming Soon To One Paseo

The ButcheryThe Butchery in San Diego, CA, a popular Southern California-based full-service butcher shop known for high-quality meats, artisan cheeses, craft beers, and wines, will celebrate the Grand Opening of its only location in San Diego at the One Paseo development in Del Mar on Saturday, May 18 from 11 a.m. to 4 p.m. Festivities will include live music and grilling on-site, and guests will have the opportunity to sample select meats, cheeses, and accompaniments from The Butchery’s premium purveyors including Mishima, Snake River Farms, Pasturebird, Salmon Creek Farms, Aniata Cheese Co., and Rockin Rubs, to name a few.

The Butchery specializes in offering the highest quality meats like dry-aged and cedar-aged beef, wagyu, all natural pork and poultry, and even exotic options like bison and venison, all of which can be hand-cut to order and prepared to each guest’s specifications by skilled butchers. Locally-made sausages, ground beef prepared in-house, and pre-marinated meats are also available, along with a fresh-catch, sustainable seafood selection and deli case stocked with charcuterie and artisan cheeses. In the retail portion of the store, The Butchery carries specialty grocery items like fresh baguettes, seasonings, deli accompaniments, and a curated selection of hard-to-find craft beers and high-end wines that can be expertly paired or suggested by their knowledgeable staff.

“We’re delighted to be opening our San Diego location at One Paseo,” said owners Robert Hagopian and Brian Smith, who began The Butchery in 2014 with the intention of providing a convenient place to purchase high-quality and exotic meats in Southern California. “Since day one, a top priority for us has been to align The Butchery with the needs of the locals in the area where we plant our roots, and we’re proud to introduce The Butchery to the Del Mar community.”

The One Paseo location will feature a full kitchen, expanded deli, and seating area that will serve hot dishes, sandwiches, salads, and sides using products sold in the retail portion of the store. Every ingredient used on the menu will be available for purchase, from the meats to the sauces to wine and craft beer on tap. Offerings will include a Hot Steak Tip Sandwich, Italian Sausage with Goat’s Milk Cheddar, Pastrami, Soft Pretzels, Cheese and Charcuterie Plate, Macaroni or Potato Salad, and more.

The One Paseo location (3720 Caminito Court, Suite 0200) will be open daily from 9:00 a.m. to 8:00 p.m. The Butchery also operates three stores Orange County: Brea, Costa Mesa, and Crystal Cove.
