Downtown’s Florent has transformed its menu, from brunch to dinner, with the help of new Executive Chef, Abe Botello. Botello has brought his San Diego upbringing and over ten years of experience in the city’s top kitchens to Florent’s table. He is now reshaping the popular Gaslamp destination’s dining to inspire comforting tastes with elevated recipes.The brunch menu, launched in early December, offers something for everyone with a unique mix of morning favorites. His Chicken & Waffles gives the breakfast favorite an upgrade with duck-infused waffles, duck bacon, chive butter and 100% Vermont maple syrup. Other dishes such as Shrimp & Grits, Deviled Eggs with smoked salmon, Truffle Burger and his Marscapone & Blood Orange Toast are filled with vibrant flavors that wake the tastebuds. Florent Restaurant & Lounge is pleased to announce the appointment of Abe Botello as Operational Executive Chef. Chef Botello brings over 10 years of culinary talent to Florent’s kitchen. The San Diego native’s passion for his craft and skilled expertise will be used to direct day-to-day culinary operations and refine Florent’s menu with innovative recipes and seasonal ingredients.
With its name derived from the historical architecture of the “Old City Hall” building, along with paying homage to the year the building was established, 1874, the split level venue will celebrate San Diego’s immense culinary and nightlife scene with a creative collaboration by celebrity Chef Richard Sweeney and San Diego’s premiere designer Michael Soriano.
San Diego’s culinary and social culture has evolved and with Florent, you’ll find an approachable elegance and a playful interior. From the mind of Michael Soriano, one can only imagine to experience the visually unexpected, with an organic and demure touch of glamour. “Design for me is about giving people the opportunity to reconnect to those good feelings, those good memories,” says Michael, and that sensibility will flow through the mindset of the Florent concept.
