Following Pisco Rotisserie & Cevicheria’s flagship success within Point Loma’s Liberty Station neighborhood, restaurateur Sami Ladeki and Executive Chef Emmanuel Piqueras are pleased to announce the opening of a second location of Pisco Rotisserie & Cevicheria at 5970 Avenida Encinas in the progressive dining scene of Carlsbad. Now open for lunch and dinner service, Pisco introduces a menu of modern takes on Peruvian classics to North County, with unique dishes and special offerings created specifically for the Carlsbad market. The new location transforms the 4,500-square-foot property into North County’s destination for the largest selection of pisco-driven cocktails as well as dishes inspired by Peru — a country known for its culinary creativity and melting pot of cuisines.
CHEF EMMANUEL PIQUERAS | PERUVIAN CULINARY AMBASSADOR — As the Culinary Ambassador to the U.S. and Canada through Peru’s official tourism authority, Chef Emmanuel Piqueras has generated a new appreciation for Peruvian cuisine in North America. Highly regarded for Sabor y Fusion, his popular food show on Latin America’s largest international cable network, Piqueras began his career at Arzak (Michelin Guide Three Stars; World’s 50 Best Restaurants). Chef Piqueras went on to lead the kitchens as Executive Chef of Andina (Portland, OR), Mixtura (Seattle, WA), Limon (San Francisco, CA), and Panca (New York City, NY) among others. Now, as Executive Chef/Partner of Pisco Rotisserie & Cevicheria, Piqueras is excited to bring his Novoandina-style cuisine, largely influenced by his experiences growing up in Lima, to Southern California.
DINE | FRESH CEVICHES AND MORE —At Pisco, Chef Piqueras introduces San Diego culinarians to new Peruvian ingredients, which have fueled a global craze for this Andean country’s cuisine. Borrowing from the ancient cooking techniques of his home country, Chef Piqueras’s menu spotlights fresh produce and proteins with an emphasis on ceviche and pollo a la brasa (aka. rotisserie chicken). Along with Peruvian crowd-favorites that debuted in Point Loma’s Liberty Station, Carlsbad lunch-goers may enjoy a variety of eight new sandwiches, salads and vegetarian options that marry colorful produce, locally caught seafood and Peruvian flavors with a California twist. Sandwiches and wraps spotlight traditional and modern flavors, including the rocoto burger featuring Wagyu beef patties topped with lettuce, tomato, onion and a spicy cream sauce of Peruvian rocoto peppers. Health-forward eaters will delight in the fresh selection of salads, including a seared salmon salad and lettuce cups featuring Pisco’s famous rotisserie chicken with a spicy aji amarillo sauce, cucumber, tomato, avocado and cancha (fried corn). Chef Piqueras puts a Peruvian flair on fresh vegetarian dishes, such as a cremini mushroom ceviche with red bell peppers, tomatoes, yam and Peruvian corn, and a mushroom saltado wrap packed with a stir-fry medley of vegetables in a soy anticucho sauce.
DRINK | THE LARGEST SELECTION OF PISCO COCKTAILS — A destination for the beverage experience in itself, Pisco continues to offer San Diego’s largest selection of pisco-driven cocktails. The Peruvian grape-based brandy finds its way into the cocktail list, separated into ‘Classicos’ and ‘Nuevos’ — all utilizing the distinct spirit familiar to that region of South America. Stick to the classics and enjoy a pisco sour, or discover a new favorite with a pasion de ancho off the ‘Nuevos’ menu made with Pisco Acholado, coconut rum, ancho chile liqueur, passion fruit puree and heavy cream. Beyond craft cocktails, Pisco Carlsbad features an expanded menu of wines by the glass, including Peruvian and other South American whites and reds, as well as local and Peruvian beers.
NEW HAPPY HOUR | POINT LOMA AND CARLSBAD — To celebrate the Carlsbad opening, Pisco has introduced a new daily happy hour for both the original Point Loma location from 5 – 7 p.m. and the new North County outpost from 3 – 6 p.m. Happy hour features $2 off all drinks, including signature cocktails, flights and an array of wines and beer by the glass.
