New Executive Chef Mike Minor

La Jolla Beach & Tennis Club appoints new executive chef Mike Minor to lead the culinary teams at the Marine Room, the Shores Restaurant, Club Dining and Catering events. The assignment is ideal for the award-winning chef who established his reputation for innovation and creativity in Las Vegas where he became nationally known for inspired dishes that impress the eye as well as the palate.  Mike has worked under the guidance of Las Vegas’ biggest names in the industry including Wolfgang Puck, Mary Sue Milliken, and Susan Feniger.

“It has been a longstanding dream of mine to live and work in San Diego,” said Minor. The food, culture and climate of the city reflects my style of cooking, and I can’t wait to incorporate that into the menus at the Marine Room, Club Dining and the Shores.”

Minor’s charismatic personality is a welcome addition to the La Jolla beach & Tennis Club. His hard-working, sincere, and passionate demeanor has led to multiple television appearances, including Chopped and Cutthroat Kitchen on the Food Network and frequent cooking demo’s on local news channels. He was also recently recognized by the James Beard Foundation for his volunteer service with several global charitable organizations including March of Dimes and Three Square.  A deep passion for regional Mexican cuisine shapes his creativity and cooking style.

Minor has already made a significant impact in the Marine Room, providing a fresh, exciting dining experience. Guests will be delighted to find additions to the menu that reflect his love of Latin flavors and local, sustainable ingredients including Baja California Swordfish with pico, Peruvian puree, spring onion, grilled shrimp and aji amarillo, Coconut Miso King Salmon with black Thai rice, hibiscus beet puree, yuzu pearls and salmon caviar, Grilled Hearts of Palm with aji verde and Pistachio Crusted Rack of Lamb with Saint-André leek spoonbread, artichoke, and black Muscat.

A fresh take on The Shores’ menu is the Chef’s next project, where he will emphasize the use of local indigenous ingredients in a casual, beachfront setting. In the meantime, head in to enjoy the newly opened ocean front patio with seating steps from the sand. Guests can take in the ocean breeze, listen to the sounds of the crashing waves and savor a meal while taking in a classic La Jolla Shores sunset.
