Cusp Dining & Drinks, located high atop Hotel La Jolla, has the ocean views, but unlike many other scenic eateries, they also have fantastic food to pair. New to dinner are a variety of fresh, flavorful dishes from Executive Chef Ingrid Funes that highlight the season. To start, try Funes’ Butter Lettuce Salad with Serrano Ham, point reyes cheese crumbles and bleu cheese dressing, or her Pulpo a la Plancha with heirloom tomato, radish, pesto, glazed balsamic, crispy garbanzo beans and olive tapenade. For entrees, Funes’ added a California Steelhead Trout with herb infused orzo, brussels sprouts, pickled cauliflower and carrots and lobster infused butter sauce, as well as Roasted New York Steak with grilled maitaki mushrooms, pearl onions, pee wee potatoes, romanesco cauliflower, romesco sauce and demi glaze.
