One Paseo, a mixed-use development bringing a variety of shops, restaurants, living spaces and offices to Del Mar Heights, announced the addition of four new notable eateries to its growing selection of retail and culinary tenants. The new restaurants that will reside at One Paseo include CAVA, a Mediterranean culinary brand with a healthy, fast-casual restaurant experience; Salt & Straw, a family-run, ice cream company known for its taste provoking, imaginative ice cream creations; URBN Pizza, a coal-fired pizzeria that serves local draught beers, craft cocktails and Haven-style pizzas; and SusieCakes, an all-American, home-style bakery specializing in an array of sentimental dessert favorites.

These four tenants join a culinary lineup of much-anticipated eateries that include Joe & The Juice, The Butchery, North Italia, International Smoke, Tocaya Organica, Sweetfin Poké, Ways & Means Oyster House, Shake Shack, Parakeet Café, and Tender Greens, which were announced earlier this year. Retail tenants coming to One Paseo include Van de Vort, West of Camden, Whiskey + Leather and SoulCycle.
The design of One Paseo will capture the look, feel and evocation of the ‘country mart’ concept. One Paseo will bring a comfortable sense of community with a live-work-play environment featuring authentic retailers, family-friendly spaces, open plazas for hanging out with friends, and well-rounded programming to include signature events, collaborative events with the community and non-profit partners, and seasonal and holiday events.

CAVA was born out of a desire to fuel full lives through a bold and innovative food culture, rooted in the heritage of the culinary brand’s founders Ted Xenohristos, Ike Grigoropoulos, and Executive Chef Dimitri Moshovitis. The three first-generation Greek Americans are childhood friends who wanted to bring the authentic Mediterranean flavors and experiences of their Greek upbringing to a wider audience in a modern, accessible format. With more than 50 chef-casual restaurants and a line of handcrafted dips and spreads sold in over 200 Whole Foods Market locations, CAVA started as a full service restaurant in Rockville, MD in 2006.
