The new Eddie V’s boasts 10,768 square feet, including a 635 square-foot patio (seating for a combined total of 302 guests). The interior color palette showcases soft, sultry variations of earth tones, including mixed-wood finishes, natural tiled-stone walls of travertine, and shimmering stacked-glass accents. The contemporary design is marked by a two-story, glass-encased wine cellar; custom, Art Deco-styled light sconces and original local artwork adorns walls throughout the space.

PRIVATE DINING: Eddie V’s has three private dining rooms (with full AV capabilities): The Speakeasy Room seats up to 10 guests, The Upper Speakeasy Room seats up to 10 guests and The San Diego Room seats up to 40 guests.

About Executive Chef Partner Brian Moran
As Executive Chef Partner at Eddie V’s Prime Seafood San Diego, Chef Brian Moran directs a kitchen staff of more than 30 and is responsible for all menu execution, culinary development and training.
Chef Moran has more than 19 years’ experience in the restaurant industry, including more than seven years’ experience as an executive chef. Before taking on his position in San Diego, Chef Moran spent a year serving as executive chef at Eddie V’s CityCentre location in Houston, Texas. His signature style of highlighting a dish’s natural flavors and respecting its quality and freshness make Chef Moran a perfect fit for Eddie V’s.
Chef Moran has been constantly growing and challenging himself to reach new heights in his career. He completed Diablo Valley College’s Accredited Culinary Program in 1999; his restaurant experience began at age 19, when he was hired as a line cook and then worked his way up at several restaurants along the West Coast.
Chef Moran’s professional culinary past includes working at Del Frisco’s Double Eagle Steakhouse and China Grill Corporation in Las Vegas. Before joining Eddie V’s, he served as executive chef at several California restaurants, including Bing Crosby’s Restaurant and Piano Lounge, Joe DiMaggios Italian Chophouse and Maria Maria.
In his newest position in San Diego, Chef Moran will continue his commitment to creating a memorable dining experience for all of his guests. When he’s not in the kitchen, Chef Moran enjoys running and biking on the beach and spending time with his friends and family.
