Cusp Dining & Drinks atop Hotel La Jolla has the ocean views, but unlike many other scenic eateries, they also have fantastic food to pair. And with Chef Ingrid Funes helming the kitchen, her dishes are as easy on the eyes (and palate) as the views.
New to fall are a variety of hearty, warm dishes that highlight the season. To start, try Funes’ Baby Beet Salad with oranges, shaved baby beets, roasted beets, honey vinaigrette, salted candied almonds and goat cheese brulee, or Cauliflower with Lemon Jam, crispy garbanzo beans and olive tapenade. For entrees, Funes’ added a Lamb Shoulder Parpadelle Pasta with braised lamb shoulder, white mushrooms, and cherry tomatoes, as well as Roasted New York Steak with pee wee potatoes, turnips, brussels, potato chips, salsa verde and demi sauce, and a Roasted Lamb Loin with sunchokes mashed potatoes, king mushrooms, baby carrots, pearl onions, and smoked demi glaze.
