Broccolini with Lemon and Olive Oil

Just back from a fun trip to the Farmers’ Market.  Do I follow the Mediterranean diet? Well, I’m a full-blooded Italian, so you bet! Four ingredients, and it’s never been easier to eat broccolini for lunch.

Broccolini with Lemon and Olive Oil

  • 1 bunch organic sweet baby broccoli (Broccolini)
  • Extra virgin olive oil, for drizzling
  • Juice from a fresh lemon
  • Sea salt, to taste

Trim ends of the broccolini stems and discard. Place the broccolini in salted boiling water. Remove after two minutes and immerse in a bowl of ice water. Drizzle with lemon juice and olive oil.
