Opened in Serra Mesa in Spring 2017, Carve, home of the “best pastrami in San Diego” (Big Review TV, 2017), is a modern eatery featuring ample natural lighting and communal tables as well as an expansive outdoor patio where neighbors gather to enjoy breakfast and lunch served in “fine-casual” style.
At age 12, Chris Karetas began his career selling soft pretzels at Sports Arena swap meets as part of his father’s food service company. After graduating from the California Culinary Academy and working in San Francisco kitchens as well as a continued role in the family business, Karetas pursued his dream of opening a restaurant and debuted Carve in Spring 2017.
On weekdays, Carve opens at 8 a.m. with a breakfast menu comprised of egg sandwiches on fresh ciabatta; maple glazed bacon; avocado toast; pastrami scrambles and more – plus coffees, cappuccinos and lattes using locally sourced Café Moto products.
Carve’s intentionally small menu specializes in quality meats and fresh fare via indulgent sandwiches; pastrami tacos; Carve ‘Strami Fries; seasonal salads; grilled steak and catch-of-the-day combos; mac n’ cheese and more. Notably, Carve smokes and steams its own proprietary cut of pastrami, roasts its own turkeys and offers house chermoula and mornay sauces.

In addition to six local craft beers on tap, Carve specializes in house made sodas in novel flavors including Chai Tea Fizz, Sparkling Hibiscus, Sparkling Mango Lemonade and Cream Soda topped with whipped cream and a cherry. A selection of worldly wines rounds out the menu.
