West Coast Tavern Recipe

West Coast Tavern, housed in the golden-era lobby of San Diego’s historic Birch North Park Theater, stands strong as the neighborhood’s most recognizable building, but it’s what is on the inside that counts.

Maple Leaf Duck Confit with Okinawan Sweet Potato

(serves 4)


4 duck legs

Dry rub:

1 tablespoon Caribbean Jerk Seasoning (a blend on common dried herbs, spice and chili flakes)

2 tablespoons granulated sugar

2 tablespoons brown sugar

2 tablespoons ground allspice

4 tablespoons kosher salt

Okinawan Sweet Potatoes:

2 lbs Okinawa sweet potatoes

1 cup heavy whipping cream (can be substituted with milk or half and half)

2 tablespoons brown sugar

1 two-ounce ladle of melted butter

Kosher salt to taste


Place the four duck legs into a casserole dish and rub legs with seasoning. Place into a refrigerator and let sit for 2 hours.

Onto the confit:

Wipe the seasoning from the duck legs until clean. Place into a casserole dish and cover with approximately 1 quart of extra virgin olive oil. Bring to a light boil on the stove top and place dish into a 250 degree oven. Fan off (use no convection) for 3 ½ hours. Remove and check; the leg bone should now be exposed. Let cool and remove from fat when ready to cook.

When ready to cook, heat the pan to be very hot. First, sauté skin-side-down until golden brown. Flip, and finish in the oven at 350 degrees for approximately 5 minutes.

And Don’t Forget Those Purple Potatoes:

Large dice the Okinawan sweet potatoes and boil until they are cooked. In a separate pan, heat your cream, sugar and butter. Strain potatoes, then mix (kitchen aid recommended) until fluffy. Make sure they are blended nicely, then add the cream mixture. Salt to taste.
